For 2025, the theme is tea: a collaboration with JING, the British single-garden tea purveyor, producing a whisky inspired by Phoenix Honey Orchid — a rare aromatic oolong grown in the Phoenix Mountain range of Guangdong, China, prized for dessert-wine aromas and exotic fruit character. No tea is actually added; the Whisky Mastery Team built the profile through cask selection alone, maturing predominantly in sherry-seasoned American oak for fruity, floral sweetness, balanced by sherry-seasoned European oak for roasted richness and light tannic grip, with a portion of ex-bourbon casks adding a final honeyed lift. Bottled at 43.9% ABV in packaging made with organic by-products, in keeping with the series' sustainability angle.
